Marchand & Burch Villages Chardonnay is made with fruit handpicked from the winery's vineyard at Mount Barrow. It is planted to multiple Chardonnay clones across a panorama of aspects.
Individual fruit parcels are cooled, hand sorted and whole bunch pressed to separate the finest free run juice. A light pressings cut is also taken to be fermented separately.
After minimal settling, the juice ferments naturally in equal portions seasoned French oak and stainless steel. Lees stirring begins late in the fermentation, then occurs weekly until sugar dryness is reached.
Each parcel remains separate for nine months of ageing and partial malolactic fermentation. The wine is then blended in tank and bottled with minimal fining or filtration.
Pale straw, Marchand & Burch Villages Chardonnay is finely structured and textured with gentle fruit flavours and bright mineral acidity. Cellaring potential is four years.
